Usage
|
It is used as a preservative for bread, pastries and cheese, and a mildew inhibitor for feed. Among propionates used as food preservatives, calcium propionate is mainly used in bread-this is because sodium propionate raises the pH value of bread and delays the fermentation of dough. In contrast, sodium propionate is more frequently used in pastries: since synthetic leavening agents are employed for the leavening of pastries, there is no issue of yeast growth caused by pH elevation. When used as a feed preservative, sodium propionate is more effective than calcium propionate, while calcium propionate is more stable than sodium propionate. Beyond bread, pastries and cheese, propionates can also be added to soy sauce in food applications to prevent mildew and inhibit re-fermentation. In medicine, propionates can be formulated into powders, solutions and ointments to treat diseases caused by parasitic molds on the skin. The ointment (liquid) contains 12.3% sodium propionate, and the powder contains 15% calcium propionate.
