Specifically, the ester formed by dehydration with the hydroxyl group on the 5th (δ-position) carbon atom is called glucono-δ-lactone; the ester formed by dehydration with the hydroxyl group on the 4th (γ-position) carbon atom is called glucono-γ-lactone. It appears as crystals with a sweetness different from gluconic acid. It decomposes at 153°C, with a specific rotation [α]D20 of +61.7° (C=1). It is highly soluble in water, where it hydrolyzes to form gluconic acid, establishing an equilibrium mixture with both δ- and γ-lactones. Structurally, gluconolactone and its phosphate esters are intermediates in the oxidative breakdown of glucose (the pentose phosphate pathway) in living organisms. In food processing, it serves as a coagulant for soybean or milk proteins, a preservative for meat, a leavening agent for pastries, and a stabilizer for pigments.
