Usage
|
This product has a unique sweetness, sweeter than sucrose and 1.6 times as sweet as glycine, making it the sweetest amino acid. Alanine is a non-essential amino acid for the human body, but it can undergo reversible conversion with pyruvate. It is related to glucose metabolism and is a crucial substance in physiological processes.
It is mainly used as a food additive, either alone or in the preparation of compound condiments (e.g., with monosodium glutamate). The compound sweet condiment is its best-selling application. When used alone, it is mainly added as an additive in the pickling of salted vegetables and sweet pickled vegetables. In addition, it is also used as an additive in vinegar, soy sauce, and fruit juices, with a general dosage of 0.1%-0.5%. Its main functions include improving food flavor and taste, maintaining the original color, and also providing a source of sweetness. DL-alanine is also used as an intermediate in the pharmaceutical industry.
